Soul Food: Recipes and Reflections from African-American Churches by Joyce White,

Soul Food: Recipes and Reflections from African-American Churches by Joyce White,
When Joyce White moved to New York City from Alabama, she left small-town life behind and landed a job as a food editor at a major women's magazine. Weekends, however, found her visiting churches in Harlem and Bedford-Stuyvesant, looking for a taste of home. Food has long been a part of the spiritual life of African-American churches, and what she found there, along with what she missed from home, was the comforting blend of cooking and fellowship that feeds both body and soul. In this warm and joyful collection, White offers more than 150 recipes for the foods that worshipers look forward to after services, and she captures the spirit of these sociable meals with warm, conversational, and occasionally poignant reflections from African-American churchgoers around the United States. From delicious renditions of classics such as Sugar-Crusted Biscuits to updated favorites such as Black Beans with Sun-Dried Tomatoes, as well as special fare for entertaining and Kwanzaa, the pages of Soul Food are alive with the spirit and love of African-American churches - and the terrific food to be found there.

In addition to the obvious Canadian and French peasant influences, Cajun cuisine developed out of necessity. The Moroccan cuisine blends African, Arabian, and European influences to make some of the stews called "gumbo". Cajun cuisine was influenced by African and Native American food cultures. It is what could be called a rustic cuisine--locally available ingredients predominate, and preparation is simple. James E. McWilliams, a Texas historian, chronicles the history of American food preferences, beginning with the colonists and their discovery of the locally made pepper sauces such as Tabasco, but rarely fresh!) Rather, a balance of different pepper flavors is strived for, usually involving a mixture of black, white and cayenne pepper in various ratios. The Acadian refugees, farmers rendered destitute by the British expulsion, had to learn to live off the land and adapted their French rustic cuisine to local ingredients such as rice, crawfish, and sugar cane. african food recipe (C) african food recipe Inc. 2005.
